Cooking on steel

TOOLS:

1. Place your steel on the top rack. Set your oven to Bake on the highest setting usually 500F for 30-45 or until the steel temperature reaches 500F (This will vary depends on the oven).  Check with temperature gun to check the steels temperature. Many oven’s can reach 550F. 

Caution: Steel will remain hot for 2-3 hours after use.  Wait for it to cool down before you touch it. Temperature gun

2. As the steel is warming up, now is the time to prepare your pizza dough.  If you own a digital kitchen scale make sure the pizza dough weighs between 230-275g for 11-12″ for a Napoletana pizza. If you don’t own a scale and bought your pizza dough from a grocery store or bakery, those typically make 3 pizzas.

3. Slide your pizza onto the steel​ with the pizza peel. This step can actually be tricky if you never used a peel before. This video should help.
4. Bake for 4-5 minutes(Depends on your oven), then turn on the Broiler for 2 minutes. Make sure to use a timer for this step.  You can easily lose track of time and burn the pizza.  It’s recommended to rotate the pizza midway through the Broil.

5. Use the peel to remove the pizza. Buon Appetito, perfect New York style like pizza made at home in your oven.
